# Caramelized oinion

Long cooking
Use as much oinion as you want in order to freeze it, but 2/3 should fit in the pot

- Rougly chop oinion (They'll melt)
- Add to big pot (If all of the oinion does not fit, wait until they have softened and add the rest)
- Add some fat (butter or oil, enogh for it to not stick)
- Medium heat, KEEP THE LID
- Stir every 5-10 minutes
- After 30 minutes, the oinion should be soft (Add the rest if any)
- Remove the lid, very low heat, stir every 5-10 minutes
- Do that for a while (Personally, 4 hours, check by taste once the color arrives)
